
What better way to spend a Saturday morning than to immerse yourself in all things chocolate? Amy Levin, Marlborough’s own chocolatier, runs regular Chocolate Experience workshops and is keen to share her passion and knowledge of how to make some of her artisan chocolates. Participants on the hands-on course make several different chocolates to take home. Of course, tasting at the various different stages, is an absolute essential!

Amy, who is a classically trained professional chef, has spent the last decade specialising in all-natural chocolates and desserts. The Chocolate Experience workshop reveals how it is possible to make your own artisan chocolates at home. Starting with chocolate covered stuffed medjool dates, we learned about how chocolate is made in small amounts by artisan chocolatiers, and how to easily temper chocolate so it won’t melt in your hand.
Amy’s Bounty Bites, little balls covered in dark chocolate and rolled in chopped almonds, were a hit with us all but easily my favourite were the truffles – dark chocolate with stem ginger in the centre followed by a light chocolate powdered dusting. Amy commented, “These truffles are so easy to make and only have two ingredients.”
As well as Marlborough.news, other chocolate novices at the workshop included, Clare and Nicola who were celebrating Clare’s big birthday. Clare said, “It was fun and we made something that looks very professional. I loved the tastings!”
Amy also runs other workshops: Summer Mocktails, Painting with Chocolate, Bonbon Intensive, and Fundamentals of Raw Chocolate. Starting in the autumn she is running a workshop in partnership with Ramsbury Brewery where participants will be making Ramsbury vodka and honey chocolates.
