Hilliers of Hilliers Yard is the newest wining and dining experience in Marlborough. Hilliers wine bar and restaurant, which opened a few weeks ago, offers a wide selection of small plates and over forty different wines by the glass.
Chef and proprietor, Graham Corbett, has been a chef for over thirty-seven years, starting out in Birmingham and moving to amongst other places, the Hilton at Stratford-upon-Avon. For the last three years he ran a gourmet pub just outside Oxford.
He told Marlborough.news, “This restaurant has been my dream for the last four to six years and we wanted to move to the area to be nearer family – our daughter and grandchildren live near Ramsbury. A lot of people go to a restaurant and say they wish they could just have several starters so this is what we are offering.”
Hilliers is a real family affair, with son-in-law Cameron Thomas as manager. Graham’s wife, Penny, also helps out. Graham and Cameron did all the refurbishment of the premises apart from the plumbing and electrics.
So far Hilliers has proved a big hit, particularly for women’s get togethers. The charcuterie boards, black pudding hash Borlotti bean and tomato ragout, fried quails eggs and crisp ham have proved to be some of the most popular dishes so far.
Graham is keen to use local suppliers wherever possible and so the meat comes from Andrews butchers and the fruit and vegetables from Heritage Food in Devizes. The menu will be changed frequently to reflect what is in season. There will be a special set course menu of sharing plates on offer for Christmas parties.
Wines range from £3.50 to £7.50 per glass and while there are some exclusive wines that won’t be found anywhere else in town, there will also be familiar ones.
“We want to offer affordable luxury for everyone,” stated Cameron.
Hilliers has an outside terrace as well as upstairs and downstairs seating. It is open Tuesday to Saturday from 11.30 to 3pm and 5.30 to 10pm, 11pm on Friday and Saturday. For more information go to https://www.hilliersmarlborough.co.uk/
